Zucchini inside brownies?!?

My kids are not huge fans of veggies. When my husband announced the other day that he was making brownies with zucchini in them, the kids were less than thrilled. However, after my husband was done emptying the batter into a pan, my 2 year old decided to give it a taste.

Pretty soon, she gave up using a spoon and started licking it out of the bowl.

Since there were no eggs in the batter, yet lots of zucchini, I was happy to let the kids all try the batter. To their surprise, they loved it!

When the zucchini brownies were baked and cooled, the kids were excited to try them out. I heard my kids saying to each other, "there's no zucchini in these", "Daddy was just fooling us!". They have been begging for more brownies ever since, so I'd say the brownies were a big hit. Maybe some day I can get them to eat AND like zucchini by itself, but at least eating them inside of their dessert is a start!

  1. Yum! They sound lovely! You've inspired me to get on and bake a courgette (zucchini) cake I've been meaning to bake since our 2 plants produced more courgettes than any family could comfortably eat!

  4. Those look so good!! I'll have to try those with the boys. I can get them to eat zucchini bread with chocolate chips in it so I know they would eat these as well!!

  5. That reminds me of the recipe book by Jerry Seinfield's wife - I think her name is Jessica. She has a whole system of putting vegetables in much of the favorite things that kids eat, like chicken nuggets, etc.

  8. What a great way to incorporate the veggies in the food. I might just have to try this because my daughter LOVES chocolate, but tries to avoid veggies if at all possible.

    I have always wondered (seriously, because of my girls weight) if the calories are worth the extra nutrician. (sp?)

    But, when they were tiny, I would have tried it.
